Deviled eggs is one of those recipes that can be found in the cookbooks some 20-30 years ago and in the most sophisticated magazines of today. We grew up with the traditional filling of egg yolks, sautéed onions, cod liver and topped our creation with sliced scallions or with caviar for a more festive look. Today we opt for a healthier version, swapping the cod with avocado mousse and adding lemon juice for an extra zing . We do love caviar as it brings all the flavors together and gives the deviled eggs a more sophisticated look. This recipe is easy to make and boiling the eggs ahead of time makes it even easier. Adding lemon juice to the filling keeps the bright green color for about 3-4 hours, this is why we suggest making the filling just before serving. Cut the eggs in half lengthwise. Scoop out the yolks. Arrange the egg whites on serving platter.
Make the avocado mousse: add egg yolks and avocado to a medium bowl and mash well with a fork. Add lemon juice, mayonnaise, salt, pepper and mix until smooth and creamy.
Scoop generous amount of filling into egg whites. You can also use a piping bag for a more sophisticated look.
Top each egg with 1/2 teaspoon caviar, sprinkle with chopped chives and serve.
