Well, these stuffed tomatoes are great proof of it as they are packed with flavor, simple to make, and are a colorful and healthy addition to your party table or picnic basket. The best thing about this recipe is that you can use any filing you love, swapping vegan ricotta with any of your favorite soft cheeses and using herbs to compliment your choice. We love the vegan ricotta as it is made with simple ingredients and tastes delicious on its own. Adding basil and oregano to the filling gives it a Mediterranean twist and makes it a perfect appetizer before your pasta dish or grilled fish. We love garlic and incorporated it in many of our recipes. It is a powerhouse of antioxidants, anti inflammatory and immune system boosting supplements and it elevates the palate flavor of this recipe to supreme deliciousness. We know these little gems look a bit too complicated to make, but trust us, once you make them, it will become a staple of your cooking and a go to recipe to impress your family and friends. We suggest you use campari tomatoes for easier scooping. Also you can prepare the filling the night before and fill the tomatoes right before serving. Cut a thin slice from the top of each tomato. Using a melon ball scooper or a small spoon carefully scoop out the pulp, leaving the outer shell of tomato almost intact.
Sprinkle each tomato with sea salt and a dash of pepper, and turn them upside down on a paper towel to drain for about 15min. This will prevent the filling from getting too mushy.
Meanwhile, add the next 5 ingredients to a small bowl and mix together. Blend in almond milk one tablespoon at a time until you get a creamy consistency. Taste and adjust the herbs and seasoning to your liking.
Pat dry each tomato with a paper towel and arrange them on a serving plate.
Using a teaspoon, carefully fill each tomato with herbed ricotta.
Decorate the tomatoes with chopped chives and serve.
