These nut squares pack a punch, full with seeds, nuts, healthy fats and refined sugar free, they make the perfect snack.
This recipe came to life from our obsession with nut butter and a need for a good snack that will keep you full for longer and be able to satisfy a sweet tooth. We wanted something not too sweet, with a crunch and, of course, chocolate! These squares fit the bill. They are sweetened with maple syrup which adds just the right amount of sweetness and not overwhelming the overall taste. Chia seeds and flaxseeds are very nutritious, both rich in Omega 3s and have a great amount of fiber which helps with keeping cravings away and keep you more satiated. And, at last, we add chopped hazelnuts for that irresistible crunch and a bold nutty flavor. Coconut oil helps bind everything together and just gives that melt in your mouth effect!
Topped with melted chocolate, these Nut Squares will not disappoint. Enjoy them as a snack anytime during the day or even as an after meal treat.
1 h 30 min
Line with parchment paper a 9 inch square pan.
In a medium size bowl, add the almond butter, maple syrup, and melted coconut oil. Mix until combined. Add chia seeds, flaxseeds and chopped hazelnuts and stir very well.
Spoon the nut batter into prepared pan and smooth the top with a spatula. Place the pan in the freezer for about 1 hour. Make sure not to leave them longer as it will be much harder to cut the squares.
Prepare the chocolate topping. Using a double boiler (see notes), place the morsels or the chopped chocolate in the top mixing bowl and mix occasionally until melted. Add the coconut oil and mix well.
Take out the frozen fudge from the pan, should come out easily by picking up the parchment paper. Place on a wooden board and slice the frozen fudge into 1-2 inch squares.
Line a plate with parchment paper (will be easier to take out once frozen), and place the squares leaving some space in between. Spoon the chocolate topping on top of each square, about 1 tablespoon per each. Place the plate in the freezer until the chocolate is solid, about 15-20 min. Sprinkle Maldon salt.
Enjoy right away or store in the freezer.
