Vibrant, flavorful and creamy, this vegan pesto is perfect with fresh vegetables, past or just about anything.
Pesto is a sauce that brings an abundance of flavor to the dish it is served with. Our recipe bursts with flavor, it is garlicky, citrusy and very creamy. We opted for roasted macadamia nuts as we love the taste and the rich flavor they give to this vegan pesto, but feel free to substitute them with pine nuts or walnuts. Do I need to say that this recipe is very easy and quick? All it takes is just 5 minutes of your time and you are left off with a delicious and creamy sauce that is beyond delicious! Enjoy this vegan pesto with pasta, roasted potatoes, vegetables or eat with the spoon!
Place all the ingredients except the olive oil and water, in a bowl of a food processor and blend until a loose paste forms.
With the food processor on, pour the olive oil in a slow and steady stream (scrape down the sides if needed). Add water 1 tablespoon at a time until a desired consistency is achieved. I usually like my pesto smooth and pourable, like a sauce, but sometimes I will leave it more chunky, it all depends on the recipe I intend to use it for.
Taste and season according to your needs. Add salt for more flavor, lemon juice for acidity or more garlic.
