Also called zoodles, these raw zucchini noodles are great in the summer as it requires no cooking and the dish comes together in under 30 minutes.
We love to go to our local famer’s market in the summertime and get all the nutritious and fresh vegetables and fruit. Do you know the fresher the produce, the more vitamins and antioxidants it has? Every day the produce sits on the stores shelves or even in the refrigerator it is losing some of the antioxidants and nutrients. So fresh and right from the source is best. For this Raw Zucchini Noodles we went with a slightly different pesto recipe because we wanted to use some of the garlic scapes we got from the farmers market, but any pesto recipe will work in a pinch.
This is the perfect summer meal, very fresh, flavorful and requires no cooking whatsoever!
Make Pesto: place all pesto ingredients in a blender and blend until smooth. Taste and add more salt or lemon juice if desired. Alternatively, you can use a food processor.
Run the zucchini through a spiralizer and place in a large bowl.
Add the pesto to the bowl with zucchini and mix very well.
Divide the zucchini noodles among plates (or on a big platter), scatter cherry tomatoes on top and serve.
