Healthy Dinner in 20? Who doesn’t like that!? This Pasta with Kale and Mushrooms is very simple and easy to make and is a perfect solution for those busy weeknights. If you have yet to try kale, this dish is a good start as sauteed kale has a very mild flavor. The process is pretty simple: while the pasta cooks, the vegetables get sauteed one after another and then everything gets mixed together. I love this recipe because it is quick, simple and is packed with healthy ingredients (hello 4 cups of kale ), plus it is delicious, has a nice garlicky flavor and the addition of sun-dried tomatoes takes it to a whole different level! So let’s try this!
Bring a big pot of water to a boil. Add salt and pasta to the pot and cook according to the package instructions
While the pasta cooks, heat 3 tbsp of oil in a skillet on a medium heat. Thinly slice the garlic cloves and add to the skillet.
Cook for 1 to 2 minutes until garlic is golden. Drain the garlic and oil in a small bowl and set aside.
Add the remaining oil to the skillet and saute the mushrooms for 5-7 min, stirring occasionally. Add the kale and cook until becomes darker in color, about 3 min.
Drain the pasta and rinse with cold water. Add it to the skillet along with the garlic oil and mix with the vegetables. Let it heat up for 1 min. Taste and season with salt and pepper.
Divide the pasta and vegetables among the plates, sprinkle with the sundried tomatoes and ricotta cheese if using. Enjoy!
