Nutritious and delicious, this quinoa salad is very simple and makes for a perfect warm weather healthy meal!
Quinoa has become very popular in recent years as it is considered a superfood. It is naturally gluten-free, high in protein, fiber and has many vitamins and minerals including vitamin B and magnesium. Quinoa is cooked and prepared like a grain but is actually a seed, making it perfect in a grain-free diet. This quinoa salad recipe is very simple as it uses all basic ingredients and it comes out very fresh, vibrant and absolutely delicious! Plus, if you prepare quinoa one day ahead, this salad comes together in no time! You know the best part? This quinoa salad packs very well, so it is perfect to take on the go or as a work lunch. Win win!
Prepare the quinoa: bring water to boil in a medium size pan over medium-high heat. Mix in quinoa, salt and oil. When mixture starts to boil, turn the heat to low, cover with a lid and let cook for 15 minutes.
Transfer cooked quinoa to a large mixing bowl and set aside to cool.
Once the quinoa is room temperature, add the salad ingredients and toss together until well combined. Season with salt and pepper to taste.
