A Gluten Free and Grain Free version of the classic Banana Bread.
A classic and a traditional snack bread, banana bread is usually the most baked recipe in most homes and for a good reason! It is quick, easy to make, and is perfect as a snack, dessert or even breakfast! Definitely a winner! Our Gluten Free and Grain Free banana bread comes out moist, lightly sweet and chocolatey plus the house is going to smell amazing while it bakes! This recipe can be easily made vegan if you switch the regular egg for the flax egg, see the notes for the flax egg instructions. The flour blend used in this recipe is almond and cassava. I like to combine the two as it makes the bread lighter and easier to digest. Let’s start baking!
Preheat oven at 350 F and line a loaf pan with parchment paper
In a large mixing bowl mash 3 bananas until very smooth. Add the coconut oil, egg (or flax egg), coconut sugar, vanilla extract, cinnamon, salt and mix very well using a whisk.
Add to the bowl cassava flour, almond flour, baking powder and baking soda and stir until combined. Lastly fold the ½ cup of chocolate chips.
Pour the batter in the prepared loaf pan and sprinkle the remaining chocolate chips on top
Bake for about 40-50 min, until it is golden. Insert a toothpick in the middle and if it comes out clean than it is done.
Let it cool for a few minutes in the pan, then transfer on a wooden board or a cooling rack to cool completely.
