Delicious and beautiful tricolor string bean salad ready in 15 min.
String beans come in different colors with the most known variety being green, but they also come in yellow and purple colors. More often found at the farmers market, the yellow and purple kind of string beans are, essentially, the same thing as green beans and are interchangeable in recipes. Green beans, as well as yellow and purple string beans, are full of vitamins, minerals, and fiber making them a great addition to our diet. There are many delicious ways to cook them such as blanching, sauteing or roasting and are a great side dish whether at weeknight meals or holiday parties. Our Green Bean Salad comes out simply delicious and full of flavor which is mainly due to roasting for a short time at high temperature. After roasting, the green beans absorb completely the garlic marinade, get some beautiful color but still maintain a crunch. This recipe is perfect for every occasion and will make for a great side dish on Thanksgiving or other holiday meals.
Preheat the oven to 400 F
Wash the green beans and place in a bowl.
Add the crushed garlic, olive oil and salt and mix very well until the green beans are well covered.
Place the beans in a single layer in a sheet pan and roast for 12-15 min, until tender, tossing once while cooking.
Place in a serving platter, sprinkle some lemon juice, parsley and serve.
