A delicious and healthy fall inspired kale salad with apples, pecans and cranberries.
Loaded with nutrients and vitamins, kale is one of the healthiest greens nature has to offer. We love kale as it is so versatile and can be enjoyed cooked or raw. Salads, though, are our favorite way to enjoy kale: it is easy to prepare and takes minutes to assemble if you have the dressing ready. The key to making kale taste good raw is to massage it very well with a delicious marinade. The massage helps kale become tender and absorb the dressing/marinade flavors. In this kale salad recipe we used our favorite lemon garlic dressing and some of the best flavors of fall: cranberries, pecans and apples. When assembled, this salad is not only delicious but also looks beautiful and can be a perfect salad for the holiday table. Did I mention it is travel friendly? Massage the kale ahead of time, bring the toppings in separate bowls and sprinkle everything on top when ready to serve! Done and done! I am definitely making this for Thanksgiving this year!
Prep the Kale: wash kale then separate the leaves from the stems, discarding the stems. Cut the leaves in bite size pieces.
Prepare the dressing: mix all the dressing ingredients in a jar, put the lid on and shake it very well until very well mixed.
In a medium salad bowl, add the kale and pour the dressing over the kale. Massage it very well using your hands.
Sprinkle the cranberries, pecans and the apple slices on top of kale and serve.
